Thai Style Cuttlefish

INGREDIENTS

  • 300g cuttlefishes
  • 20 basil leaves
  • 1 teaspoon minced garlics
  • 10g shredded chilies
  • Oil
  • 1½ tablespoon fish sauce
  • 1½ tablespoon sweet soy sauce
  • ½ teaspoon sugar
  • 2 tablespoon chicken stock (or water)

Thai Style Cuttlefish

Serves: 4

Directions:
  1. Clean the cuttlefish and pull the membrane away, score flesh in a criss-cross pattern.
  2. In a wok, pour in oil and then heat over with medium high heat, stir-fry garlic and chilies until fragrant. Add cuttlefish and fry until it is cooked, and then add fish sauce, sweet soy sauce, and sugar. Add broth and bring to boil, put in basil leaves and stir well.

 

Tips:
When you purchase fresh whole cuttlefish look for intact bright skin, intact head, arms and tentacles and a pleasant fresh sea smell.
