Directions:
- Heat oil on medium-high heat in the THERMOS 26cm Deep Non-stick Frying Pan. Crack an egg into the pan and fry the egg sunny side-up.
- Set aside the fried egg. In the same pan, add finely chopped shallot, cut-up sausages and chopped bok choy. Stir-fry for 1 minute until fragrant.
- Add cooked noodles to the pan and stir-fry quickly.
- Add soy sauce, dark soy sauce, and finely chopped bird’s eye chili (optional). Stir quickly to combine.
- Continue to stir-fry for 2 to 3 minutes until the noodles are evenly coated with the sauce.
- Transfer to a serving dish and top with the sunny side-up fried egg.
- Squeeze lime juice on top of the noodle.
