Sweet Potato Cottage Pie

Ingredients

  • 2 tbsp oil
  • 100g yellow onion (diced)
  • 20g garlic (chopped)
  • 50g shitake mushroom
  • 70g carrot (diced)
  • 500g chicken (minced)
  • 60g green peas
  • 1/2 tsp oregano
  • 150ml cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 litre water
  • 600g orange sweet potato
  • 50ml cream
  • 25g butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Sweet Potato Cottage Pie

  1. Heat oil in the Essential Casserole Pot then sauté the onion and garlic until fragrant. Add in the shitake mushroom & green pea then add in the oregano and sauté till it’s slightly smooth.
  2. Then, add the chicken and carrot. Stir it and break up the minced meat until it is almost cook.
  3. Next, add in the cream and season with some black pepper and salt. Bring to a boil and reduce heat to low and simmer until thickened.
  4. Once done, remove the chicken mixture from the Essential Casserole Pot into a casserole dish.
  5. Next, add water into the Essential Casserole Pot and bring to a boil.
  6. Then, steam the sweet potato in the Steamer Top for 10 minutes or until just tender. Once done, drain it and add the butter, cream, pepper and salt. Mash till smooth.
  7. Lastly, top the chicken mixture with sweet potato mixture. Ready to be served.
