- Marinate chicken in Shaoxing wine for 30 minutes.
- Add olive oil to inner pot, heat it over medium high heat, fry chicken until browned all over, and put the chicken aside.
- In the same pot, add in ginger, garlic and shallot, and cook until fragrant. Add in chicken, stir fry for 3 minutes and add in Shaoxing wine, soy paste, oyster sauce, soy sauce and sugar, and bring to a boil.
- Add in spring onion, cover with lid and transfer the inner pot into the vacuum outer pot, and allow heat insulation cooking for 2-3 hours.
