Papaya Snow Fungus Soup

INGREDIENTS

  • 1/2 large Snow Fungus
  • 1 tablespoon Apricot Kernels
  • 1 Knot Pandan Leaf
  • 2 Cups Water
  • 50 gram Rock Sugar
  • 1/4 medium Papaya (cut into bite size pieces)

Papaya Snow Fungus Soup

Directions:

  1. Soak snow fungus in water until puffed up and double in size, tear into bite size pieces, and trim away the yellow bits

  2. Place snow fungus, apricot kernel, pandan, and water in a pot, cover, and bring to a boil in 10 minutes
  3. Add rock sugar and papaya, cook in THERMOS food jar. After a while the soup will thicken. The texture should be just right
  4. Discard the pandan leaves, and serve
