Harira Soup

INGREDIENTS

  • 4 tbsp olive oil
  • 2 yellow onion (minced)
  • 3 cloves garlic (minced)
  • 4 tomatoes (diced)
  • 2 celery stalks (diced)
  • 1 cup cooked brown lentils
  • 2 cups cooked chickpeas
  • 2 tsp ground cumin
  • 1⁄2 tsp ground cinnamon
  • 1 tsp freshly ground black pepper
  • Salt to taste
  • 2-3 tbsp fresh mint leaves (chopped)
  • 2-3 tbsp fresh parsley leaves (chopped)
  • 2-3 tbsp coriander leaves (chopped)
  • 1L Vege Broth / Lamb Broth

Harira Soup

  1. Heat the olive oil in the inner pot.
  2. Add garlic, onions, celery stalks and cook until translucent.
  3. Add the tomatoes and cook for 1-2 minutes then stir to combine then add the lentils, chickpeas and all of the spices. Add the fresh herbs, too.
  4. Pour in the vegetable broth and bring the entire mixture to a boil.
  5. Reduce the heat to medium-low and cover, cooking for about 10 minutes.
  6. Turn off heat and transfer the inner pot into the vacuum outer pot and allow heat insulation cooking for 1 hour before serving.
